Oat baskets with yogurt and fruit

Summer is almost over, so let’s see it out with a final delicious healthy recipe that we can make over and over again with our kids. This is just what we need to welcome September as we leave this long hot summer behind us: oat baskets with yogurt and fruit. These cool, colourful desserts or quick snacks are so versatile and will make our little ones realise just how tasty fruit can be.

 

Here we go then with the ingredients and the procedure.

 

Ingredients:

  • red grapes
  • 180g Greek yogurt
  • figs
  • peaches
  • 100 g pitted dates 
  • 110 g oats flakes
  • pinch of salt
  • 1 tsp cinnamon
  • seed oil
  • 60 g acacia honey

Procedure:

Preheat the oven to 170°C.

Put the dates into a food mixer and blitz to give a creamy paste. Add the cinnamon to taste, a pinch of salt and the honey. Stir it all with a spatula, add the oats and combine all the ingredients to give a smooth mixture.

Now take a muffin pan or moulds and use a pastry brush to coat the inside of the wells or moulds with the seed oil.

Put a spoonful of mixture into each well or mould and use the back of the spoon to shape baskets with a dip in the middle.

Bake in the oven at 170°C for 15 minutes. When they are ready, take the baskets out and leave to cool.

Stir the Greek yogurt for a few moments with a teaspoon to make it creamier. Arrange the cooked baskets on a serving plate and fill with the yogurt.

Add the fruit, chopped into pieces, and decorate the baskets as you like with your kids.

Put the baskets into the fridge until you are ready to serve them and, voilà, your fruit and yogurt baskets are ready to eat!
